Using a farm-to-desk approach, we work with local farmers to bring fresh, seasonal ingredients to our restaurants to create vibrant, delicious, and nutritious vegetarian, vegan, and gluten-free menu items.

Other environmentally-friendly practices we stand behind include:

Growing our own farm fresh ingredients. In addition partnering with local farms, we have our very own farm in Long Island and grow fruits and vegetables to source directly to our restaurants. Being that close to the end product right from the start allows us to keep costs low and reduce the environmental impact transporting ingredients from across the country.

Skipping synthetic fertilizers, antibiotics, pesticides, and other additives. We want our food to be wholesome and taste fresh. The practices that we and our local purveyors engage in allow us to serve the best quality and healthiest products to our customers. There is never any question about how our food looks or tastes. We make the best use of it and encourage little food waste in the restaurant industry.

Picking fruits and vegetables at their peak to ensure optimal flavor. The one thing we’re not willing to sacrifice is flavor. We want our customers to enjoy the meals that we create for them. By picking produce when it’s ripe and ready to eat, we don’t acquire an abundance of product that sits on shelves and in fridges waiting to ripen. The fruits and vegetables that we serve are used right away to fill customer demand and their stomachs!

Raising animals humanely. Factory farming practices are nothing like the way we raise our chickens. We treat them humanely and feed them a diet of vegetables so that they’re as healthy as possible. Doing so allows us to produce a superior meat product which we include in many of our menu items. Knowing where their food comes from and how it was raised is something conscientious consumers require. We’re transparent in our procedures and are committed to sustainability in every way possible from water conservation to the food we feed our animals.
